Orange Julius

Tastes like the real thing!
I adapted this to fit in the nutribullet because we don't have a blender..
Serves 2. Or 1 if you're hungry..

3 oz orange juice concentrate, frozen
1/2 cup milk
1/2 cup water
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
5-6 ice cubes

Smoothies

Since we got a Nutribullet, I've been replacing my breakfast with a healthy smoothie each morning then sometimes having another for a snack somewhere in the day. I am going to start adding my favorite recipes. Usually I just add whatever sounds good (along with done leafy greens) but I want to write down the ones worth repeating exactly.
Right now I am drinking this yummy concoction:

Pineapple Orange Creamsicle
1 orange, peeled
1/2 cup canned pineapple (not drained)
A large handful of baby spinach
1/2 banana, frozen
1/2 cup plain yogurt
Small handful almonds
Couple spoonfuls Chia seeds
1/2 teaspoon vanilla extract
Milk to fill line
Few ice cubes, optional

Here's my favorite dessert version:

Healthy Chocolate banana smoothie
2 bananas, frozen
1 spoonful unsweetened cocoa powder (or more, to taste.)
Handful of almonds
Spoonful or two of flax seed
1/4 t. Almond extract
Milk (amount depends on how thick you want it)

Mango sorbet

Made this a couple times and everyone liked it. I want to try substituting strawberries next time instead of mango.

Ingredients:
12 oz bag frozen mango pieces
1 1/2 tablespoons lime juice
1/2 cup water
1/2 cup sugar

Directions:
In a sauce pan, bring water and sugar to a boil. Reduce heat and simmer until the sugar is dissolved. In a blender or food processor, combine mangoes and lime juice until they are roughly chopped. Slowly add in the sugar and water mixture until completely combined. If you want a thicker sorbet, you add less sugar mixture or throw it in the freezer for a few hours. Enjoy!

Buttermilk wheat waffles

Awesome waffles. So tender and flavorful.

INGREDIENTS

2 large eggs
1 3/4 cups (14 ounces) buttermilk (I used whey from our homemade, plain yogurt)
4 tablespoons butter, melted
2 teaspoons vanilla extract
1 3/4 cups (7 1/4 ounces) all-purpose flour (I used whole white wheat)
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
DIRECTIONS

In a medium-sized bowl, beat together the eggs, buttermilk, melted butter, and vanilla. In another bowl whisk together the dry ingredients; combine the wet and dry ingredients just until smooth.

Garlic cheddar biscuits

Everyone liked these. Crispy on outside, soft and flavorful inside.

Ingredients

Biscuits:
about 2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon garlic powder
½ cup cold unsalted butter, cut into small cubes
1 cup shredded sharp cheddar cheese
¾ cup cold milk
Butter topping:
1 1/2 tablespoons unsalted butter, melted
1/4 teaspoon garlic powder
⅛ teaspoon salt

Instructions

Preheat oven to 425 degrees F.
In a medium mixing bowl mix together flour, baking powder, ½ teaspoon salt, and ½ teaspoon of garlic powder until well combined.
Using a fork or pastry cutter, cut butter into flour mixture until mixture is crumbly. Mix in cheese. Mix in cold milk just until combined (do not overmix).Drop biscuits (about 3 tablespoons of dough per biscuit) onto a nonstick baking sheet.
Bake biscuits at 425 degrees F for about 10-15 minutes or until browned on bottom. Remove from oven and while still hot, brush melted butter mixture on top. Makes 12 biscuits

Pizza Crust

this makes a nice soft dough that turns into a perfect crust.
Ingredients:
1 cup warm water
1 tablespoon honey
1 tablespoon oil
1 tablespoon instant yeast
1 teaspoon salt
2-3 cups flour (I use half whole white wheat)

Mix together in kitchen aid, adding flour little at a time. Do not over flour! Knead for about 5 minutes or until nice dough forms.
Rise, shape, add toppings, bake at 475 on pizza stone for 10 minutes or until golden.

Rocky Road Cookies

Justus loves rocky road ice cream, so I thought we'd try a cookie version. Tastes more like a brownie, but it's definitely rocky road flavored. In fact, we thought next time we would try baking it as brownies. Maybe with a little less flour, though. Or add water.

Ingredients:
2 cups chocolate chips (we used semi sweet)
1 stick butter
2 eggs
2/3 cup sugar
1 1/2 t. Vanilla
3/4 cup flour
1/4 c. Cocoa
1 heaping t. Baking powder
1/4 t. Salt
1-2 cups chopped walnuts
1/2 cup mini marshmallows

Directions:
Melt butter and chocolate chips. Let cool. Beat eggs, sugar and vanilla. Add dry ingredients and mix. Stir in walnuts. Drop by tablespoon full onto greased cookie sheet. Push a couple of marshmallows gently into the top of each cookie.
Bake for 10 minutes at 325.
