One Hour Dinner Rolls

I've tried a few of these different one hour type dinner rolls, and I have to say these are my favorite to date. I used water and dry milk powder because I didn't have non fat milk. I also made some great cinnamon rolls with the extra dough. (I didn't need 24 rolls)
The dough is tricky because it is VERY sticky. Not your typical bread dough that comes nicely together. I will just leave the link for now..

Buttermilk wheat waffles

Awesome waffles. So tender and flavorful.

INGREDIENTS

2 large eggs
1 3/4 cups (14 ounces) buttermilk (I used whey from our homemade, plain yogurt)
4 tablespoons butter, melted
2 teaspoons vanilla extract
1 3/4 cups (7 1/4 ounces) all-purpose flour (I used whole white wheat)
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
DIRECTIONS

In a medium-sized bowl, beat together the eggs, buttermilk, melted butter, and vanilla. In another bowl whisk together the dry ingredients; combine the wet and dry ingredients just until smooth.

Garlic cheddar biscuits

Everyone liked these. Crispy on outside, soft and flavorful inside.

Ingredients

Biscuits:
about 2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon garlic powder
½ cup cold unsalted butter, cut into small cubes
1 cup shredded sharp cheddar cheese
¾ cup cold milk
Butter topping:
1 1/2 tablespoons unsalted butter, melted
1/4 teaspoon garlic powder
⅛ teaspoon salt

Instructions

Preheat oven to 425 degrees F.
In a medium mixing bowl mix together flour, baking powder, ½ teaspoon salt, and ½ teaspoon of garlic powder until well combined.
Using a fork or pastry cutter, cut butter into flour mixture until mixture is crumbly. Mix in cheese. Mix in cold milk just until combined (do not overmix).Drop biscuits (about 3 tablespoons of dough per biscuit) onto a nonstick baking sheet.
Bake biscuits at 425 degrees F for about 10-15 minutes or until browned on bottom. Remove from oven and while still hot, brush melted butter mixture on top. Makes 12 biscuits

Pizza Crust

this makes a nice soft dough that turns into a perfect crust.
Ingredients:
1 cup warm water
1 tablespoon honey
1 tablespoon oil
1 tablespoon instant yeast
1 teaspoon salt
2-3 cups flour (I use half whole white wheat)

Mix together in kitchen aid, adding flour little at a time. Do not over flour! Knead for about 5 minutes or until nice dough forms.
Rise, shape, add toppings, bake at 475 on pizza stone for 10 minutes or until golden.

Artisan Bread

I've tried this recipe from the cook book Artisan Bread in 5 Minutes a Day years ago and I must've done something won't because it just wasn't good. I decided to try it again today and it was awesome! It made the perfect dipping bread for soup. Don't let the short ingredient list and simple instructions fool you.
This recipe makes a double batch, you keep the unused dough in the fridge for up to two weeks until you are ready to bake it. I am exited to try the other half as mini bread bowls!
Note: I ignored the part about heating the stone in the oven then sliding it in using parchment paper. I just let the shaped dough rise on my pizza stone and put it straight into the preheated oven. Worked great for me.

Ingredients:

1 1/2 tablespoons instant yeast
1 tablespoon salt
6 1/2 cups unbleached, all-purpose flour, plus more for dusting dough
Directions

In a large bowl mix yeast and salt into 3 cups lukewarm water (about 100 degrees). Stir in flour, mixing until there are no dry patches. Dough will be quite loose. Cover lightly with a kitchen towel but don't seal the bowl airtight. Let the dough rise at room temperature 2 hours (or up to 5 hours).
Bake at this point or refrigerate, covered in an airtight container, for as long as two weeks. When ready to bake, cut off a grapefruit-size piece with serrated knife (I have only ever made two loaves out of the batch of dough so I just divide the dough in half to form my first loaf). Turn the dough in your hands to lightly stretch the surface, creating a rounded top and a lumpy bottom. Put the dough on a piece of parchment paper set on a pizza peel or a rimmed baking sheet turned upside down. Let the dough rest for 40 minutes for room temperature dough; if you have used the dough out of the refrigerator, let it rest for 1 1/2 hours. Repeat with remaining dough or refrigerate it.
Place a broiler pan on the bottom rack of the oven. Place a baking stone on the middle rack and preheat oven to 450 degrees. Heat the stone at that temperature for 20 minutes before baking.
After the dough has rested and is ready to bake, dust the dough lightly with flour, slash the top with serrated or very sharp knife three times. Slide the dough (with the parchment paper) onto the baking stone. Pour one cup of hot water into the broiler pan and shut the oven quickly to trap the steam. Bake the bread until well browned, about 24-28 minutes. Cool completely.
If you don't have a baking stone, try turning a rimmed baking sheet upside down and heating it in the 450 degree oven for 10 minutes prior to baking. When ready to bake, slide the parchment paper with the dough on it directly onto the overturned baking sheet and bake according to the recipe. You can also stretch the rounded dough into an oval and place in a greased loaf pan. Let it rise for 40 minutes if fresh (add an extra hour if the dough has been refrigerated). Bake in the loaf pan in the 450 degree oven, watching the time carefully - check after 20-22 minutes.

Oatmeal Flax Muffins

I have been looking for the perfect base recipe for different add-ins and I think I just found it. I like a flavorful, hearty, chewy and almost healthy muffin (but not quite...). None of those white fluffy things that people call muffins but they're really cupcakes.
This time, I threw in dark chocolate chunks and craisins. Mmmm, perfect! The original recipe called for blueberries. You can add whatever you like.

Ingredients:
1 cup rolled oats or old fashioned oatmeal
1 cup buttermilk (or regular milk + 1 teaspoon vinegar)
3 tablespoons unsalted butter, melted
2 eggs
2/3 cup brown sugar
1 teaspoon vanilla
1 cup flour
4 tablespoons ground flaxmeal
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup add-ins of choice (chocolate, craisins, berries, etc)

Directions:
Preheat oven to 375°. Grease a 12 cup muffin tin.
Combine the oats and buttermilk in a mixing bowl. Let the oats soak for 15-20 minutes. Add the melted butter, egg, brown sugar, and vanilla. Stir by hand until just combined.
Add the flour, flaxmeal, baking powder, baking soda, and salt. Stir again until evenly moistened.
(Whatever I'm adding in, I like do push them in by hand into each muffin cup to make sure they are evenly distributed. You can also pour them batter into the bottom of the cups, then stir them into the batter and pour the rest in. Or just mix them all in if you don't care if they're even.)
Bake for 13-15 minutes.

Chalupas!

I LOVE tacos. And I love fry bread. How can you go wrong putting the two together? You can't. These were so good, I just ate three and only stopped because I literally couldn't fit any more in my stomach.

Ingredients:
4 c. Flour
1 1/2 teaspoons salt
2 teaspoons baking powder
1/2 cup milk (original recipe uses evaporated milk. I didn't have any but whole milk worked just great)
1 cup water
3 tablespoons oil
Additional oil for frying

Directions:
Combine dry ingredients. Stir in wet ingredients until ball forms. Knead until well combined. Let rest at least 15 minutes. Pour about an inch of oil into a frying pot and heat up oil. Separate a small section of dough and roll into a thin circle.  Fry for a couple minutes on each side. Bend in half immediately when placing on plate. Stuff with your favorite taco fillers and enjoy!

I used taco meat (mixed with kidney beans before seasoning), cheese, lettuce, tomatoes, sweet peppers (my favorite addition), sour cream and salsa. Yummmmmm....

Oh! A side note....unless you have a big family, this will make more dough than you need. I only fried up about half of it for chalupas then later for dessert we used the rest for fry bread! Roll and fry the same as before, then top with butter and powdered sugar or honey.

Chicken Soup/ Dumplings

This recipe is pretty versatile. Can be made with noodles, dumplings or even rice I suppose. In this picture, I used a little noodles and dumplings. I will add the dumplings recipe at end.

Ingredients:
-1 or 2 chicken breasts (depending on size and how much meat you want. I sometimes cook extra to use in a casserole another night.)
-couple cups of vegetables (carrots, potatoes, celery, onions..)
-chicken base/stock (I use "better than bouillon")
-garlic, parsley, thyme (go easy), 1 bay leaf, salt, pepper, onion powder (if not using fresh onion) all to taste
- about 1 or 2 cups medium egg noodles (depends on how much broth you have...) or dumplings

Directions:
1. Boil your chicken and vegetables together in pot of water. (start chicken first) Season while cooking. Check chicken and vegetables often to avoid over cooking. When chicken is done, remove from pot to cool on plate.
2. Add chicken base a little at a time and play with seasoning, tasting the liquid until it's just right!
3. When vegetables are almost done (but not quite!) add noodles or dumplings.
4. While that is cooking, chop the chicken, cutting out gristle and fat.
5. When noodles are tender, stir in the chicken and serve!

Dumplings
Ingredients:
-1 cup flour
-2 teaspoons baking powder
-1 teaspoon sugar
-1/2 teaspoon salt
-1 Tablespoon butter, melted
-1/2 cup milk

Directions:
Combine dry ingredients, gently stir in milk and butter, just until moistened.
Drop by spoonful into boiling soup. Cover pot and cook for about 15 minutes without lifting lid.

If you like a lot of dumplings, you can double recipe. I found that making 1 and 1/2 this recipe was just right for my average pot of soup.

Zucchini Bread

This recipe is awesome. I like to make miniature loaves out of it. for some reason, they taste better smaller...

With my adaptations.
Ingredients:
3 cups flour
1 t. Salt
1 t. Baking soda
1 t. Baking powder
2 t. Cinnamon
3 eggs
1/2 cup vegetable oil
1 1/2 cups white sugar
3 t. Vanilla
2 cups grated zucchini
1/4-1/2 cup applesauce (honestly, I never measure)
Grease 2 8x4 inch pans. (or if you are me 1 8x4 and 2 mini pans) preheat oven to 325 degrees.
Mix flour, salt, baking powder, soda and cinnamon together. Beat eggs, oil, vanilla, apple sauce and sugar together in large bowl. Add dry ingredients to the creamed mixture and beat well. Stir in zucchini until combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until toothpick inserted in center comes out clean. Cool in pan for a few minutes then finish cooling on wire rack.
Best eaten within a day. If you plan on keeping it for more than 2 days, it should probably be refrigerated.

Banana Banana Bread

You read that right. Double bananas equals double flavor.

Ingredients:
2 cups flour
1 t. Baking soda
1/4 t. Salt
1/2 cups butter
3/4 cups brown sugar
2 eggs, beaten
2 1/3 cups mashed over ripe bananas
( I never measure my bananas. that would be messy. I just add them until it looks like the right amount. I haven't seen it make a big difference)
chopped walnuts, optional

in a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture, just until moistened. pour batter into greased 9x5 loaf pan.

Bake in preheated oven for 60-65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

The Best Dinner Rolls

A couple of years ago I was at a friends house and had some of the best dinner rolls I've ever tasted. Of course, I insisted upon the recipe. Mine don't ever taste as good as hers do, but they are still dang good.

Recipe fills approximately 1 9x13 pan.

Ingredients:
2 eggs
1 c. Milk (mixture of half evaporated, half regular milk.)
1 half stick butter
2 T. Yeast (dissolved in 1/4 c. Water)
1/4 c. Sugar
1 1/2 t. Salt
4 c. Flour

cook or microwave the butter and milk together until butter is melted. cool just slightly while beating 2 eggs in mixer. add the butter mixture and yeast. mix well. mix dry ingredients separately, then add half at a time to bowl. Knead dough very well. Dough will be sticky. Let rise until double. Shape into rolls and place in greased pan. Cover and let rolls rise. Bake at 400 degrees for 8 to 10 minutes.

Fluffy flaky biscuits

Fluffy & Flaky Biscuits
2 c. flour
1 T. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 c. butter, frozen
1/2 – 1 c. milk
1. Combine the flour, baking powder, baking soda and salt in a large bowl.
2. Quickly grate the frozen butter on a cheese grater.
3. cut butter into flour mixture.
4. Pour in the milk, starting with just a half cup and adding more as needed until the dough comes together. You want the dough to be soft, but not too soft to handle.
5. Pour the dough onto a well-floured surface and knead for just a minute.
6. Roll the dough into a rectangle. Fold it on top of itself to make 3 or 4 layers. Roll out again and fold into thirds or fourths. Repeat at least one or two more times.
7. For the final rolling of the dough, leave it about an inch thick. Cut out biscuits with a biscuit cutter or glass.
8. Place on a baking sheet and bake at 425 degrees for 8-10 minutes, until lightly golden brown on top. Fold remaining dough back together and roll out again. Repeat process until done.
Makes about 8 biscuits...give or take, depending on how big you make them.

Blackberry Yogurt Muffins

These. Are. SO. Good. SERIOUSLY! YUM! It is a good thing that the coast has a literally neverending supply of blackberries because I will be making these again. And again. And again. Leave a few chunks of blackberry when mixing them into the batter. Oh, and they might look a little funny, but dont worry. Or maybe it was just something I did wrong... I'll take a pic next time.

Blackberry Yogurt Muffins

yield: 12 small muffins


Ingredients:

6 tablespoons softened butter
3/4 cup granulated sugar
1/2 teaspoon vanilla extract
2 eggs
1/2 cup non-fat plain greek yogurt (usually comes in about this size)
2 tablespoons milk
1 teaspoon baking powder
1/4 teaspoon baking soda
pinch salt
1 1/4 cups all purpose flour
1 cup fresh blackberries

Directions:

Preheat oven to 350 degrees. Line 12 muffin tin cups with paper liners and set aside. (I didnt use liners. Just spray muffin tin)

In large bowl, mix coconut oil and butter together. Cream with sugar until light and fluffy. Stir in vanilla, eggs {1 at a time}, yogurt and milk. Scrape edges and mix again until smooth. Pour in all dry ingredients and mix until just combined. Scrape edges and mix by hand to ensure batter is evenly mixed. Stir in blackberries gently. (I was not gentle. I liked having the whole batter blackberry-y with a few chunks.) Scoop into prepared muffin tins evenly.

Place into preheated oven and reduce temperature to 325 degrees. Bake 20-25 minutes or until toothpick comes out clean when inserted. Cool 10 minutes and serve.

Morning Glory Muffins

These are great for breakfast or a between meal snack. Packed full of healthy stuff and fills you up. Substitute or omit to your liking, of course. I like to make a batch, freeze them, then pull out as needed and microwave for about 30 secs. Could also add shredded zuccini or something.

Ingredients:
2 cups flour
1 cups of sugar
2 t. baking powder
2 t. cinnamon
1/2 t. baking soda
1/4 t. salt
2 cups carrots, finely shredded
1 cup apples, shredded
1/2 c. raisins (or craisins)
1/2 c. walnuts
1/2 c. finely shredded coconut (might want to chop it its course)
3 eggs
3/4 cup oil
2 t. vanilla

*optional substitution (I did this and it worked fine) lower sugar to 1/2 to 3/4 cup and trade half the oil for applesauce.

Instructions:
Stir together dry ingredients. Stir in fruit/veggies, nuts, coconut. In seperate bowl, mix eggs, oil and vanilla. Add liquids all at once and stir just until moistened. Spoon into muffin cups until almost full. Bake at 350 degrees for about 30 minutes or until the top of muffin springs back when lightly touched. After a few minutes out of the oven, pop out of pan and cool of wire rack.

Sweet Country Cornbread

Prepare to be amazed. This one is definitely a favorite in our family...cornbread!! This is better than out of the box, for sure. SO GOOOOD!

Ingredients:
1/4 c melted butter
1/2 c sugar
3/4 c corn meal (I'm a yellow corn meal sort of gal)
3/4 c all purpose flour
1 1/2 tsp baking powder (I add an extra pinch sometimes)
1/4 tsp salt
1 egg
3/4 cup milk

Directions:
Mix dry ingredients in medium bowl. Melt butter in bowl, add milk and egg, beat together. Make well in dry ingredients, add wet ingredients all at once. Stir gently just until moistened. Pour into greased 8x8 baking dish. Bake at 350 degrees for about 20 minutes, or until toothpick comes out clean.

Pumpkin Bread

This Pumpkin Bread is the bomb-diggity! Very moist and flavorful. Got the recipe online (Allrecipes.com) then moderated it a little. Here's my version:
This makes 6 mini loafs or 3 7x3 loaves. Could also make muffins.


Ingredients

1 (15 ounce) can pumpkin puree
4 eggs
1/2 cup vegetable oil
1/2 cup applesauce (if you don't have it, just use full cup oil)
2/3 cup water
2 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.

2. In a large bowl, mix together pumpkin puree, eggs, oil, applesauce, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

Crescent Rolls


1 c. water or milk


1 T. yeast


3 3/4 c. flour


1 t. salt


1 C. butter


1 beaten egg


1/4 c. sugar


Dissolve yeast in water. cut butter into flour then add. beat egg and sugar then add.


refrigerate overnight or all day. (longer the better) half dough, roll each half in a circle and cut in triangle slices like a pizza. roll up each triangle and bend into moon shape. let rise.


I for some reason don't have the baking instructions. I think 350 is a safe temp, and just watch till they are lightly golden.


These instructions sound wierd, but thats what it says! I'll have to double check and edit later.


Wheat Bread

This recipe was given to me by Susan Claybrook. I believe it was her mother or grandmother's, I'm not sure. She adjusted it for me to make one loaf but I am now needing to readjust it to make more! It doubles great, haven't tried tripling it though.
I hesitate to even post this on here, because #1 it's not my recipe and #2 it is almost too good to give away! But I do want it included in my recipes, so here goes: (this is from my head, not sure of exact measurments.)

Dissolve:
1 c. very warm water
1 T. yeast (or 1 packet)
1/3 c. sugar or honey

Once dissolved, add:
1/4 cup oil
some potatoes (maybe 1/4 cup?? more or less) either mashed leftovers or potato flakes both work well (sounds weird, I know, but it makes it soft and fluffy)
1 cup white flour
1 cup wheat flour

Then add:
1 teaspoon salt
maybe 2ish more cups flour (little at a time) I do half wheat, half white.

Knead dough, adding flour a little at a time until dough is not really sticky but not hard either.
I use a Kitchen Aid mixer, but it works great by hand too. When you're done kneading, just barely mix in a T. or so of oil to keep the dough from drying out and to grease the bowl.
cover. let rise to double. punch down. shape into loaf pan. let rise to top of pan.
make slice down middle of loaf if you want split top. bake @ 350 for app. 30 minutes or until golden. I butter the top when it comes out of the oven. make sure bottom is browned. cool on cooling rack.

I have made this SOOO many times (for almost a year I made it once a week) and I have to admit there were a few loafs that were less than desirable, but once I got it down this is a FAVORITE of all my family and friends. I get asked for the recipe all the time. (don't always give it though. I like being the ONE who makes really good bread)

Whole Wheat Flour Tortillas

3 cups whole
1 tsp salt
1 cup hot water
1/3 cup oil (I used canola)
Mix all ingredients thoroughly in mixer. Remove from mixing bowl and knead on countertop until smooth (add a little white flour if the dough is too sticky). Divide the dough into 12 balls, and let rest (covered) for 15 minutes. Roll each ball into a very think circle. HEat a heavy skillet (ungreased) to medium high heat. Cook tortillas until brown flecks appear, about 30 seconds each side. (Adjust heat accordingly) Use immediately, or wrap in plastic or place in a airtight container to refrigerate or freeze. To warm, wrap in damp paper towels and microwave 15-20 seconds.

Whole Wheat Blender Pancakes

This is my Grandma Petersen's recipe. I love it! My blender is not as good as hers, so it stays pretty chunky, but still good.

1 cup whole wheat kernels and 1 cup milk
Blend wheat and milk for 4 or 5 minutes in blender.


Add:2 eggs, 1 tsp salt, 1/3 cup oil, 1 Tbsp baking powder, 2 Tbsp honey

Blend only long enough to combine. Cook on hot griddle. The batter is very thin.
